2005 Emotion de Terroirs - Blackened Tilapia w/ Cherry Tomato Sauce

Tilapia w/ Cherry Tomato Sauce

     
I thought I would throw a little something together for my wife since I am always watching the Food Network.  Here's a recipe that I borrowed and altered from G. Garvin of Turn up the Heat (Episode 10: Alaskan Halibut with Cherry Tomato Sauce).  I used tilapia and mixed greens since this is what I had at home.

We enjoyed this wonderful dinner with Vincent Girardin 2005 Emotion de Terroirs.  This was an excellent Pinot Noir that I purchased from Pearson's Wine & Spirits that paired well with the blackened tilapia.

Emotion de Terroirs: deep purple color, a little smoky, very fruity aroma, but not too sweet, hint of chocolate on the palate with soft tannins.  Very easy to drink.

Tilapia w/ Cherry Tomato Sauce

INGREDIENTS
  • 4 pieces of tilapia
  • 4 tablespoons of blackening spice
  • 2 tablespoons of olive oil
  • 3 ounce of mixed greens
PROCEDURE
  1. Season both sides of tilapia with blackening spice, then pat with fingertips to make seasoning stick
  2. Lightly coat frying pan with olive oil, then heat pan
  3. Place tilapia in hot pan and brown on both sides
  4. Place tilapia in oven dish and put in oven at 350 to 375 degrees for 5 minutes  (be careful not to overcook)
  5. Place fish on plate and pour cherry tomato sauce on top
  6. Add a few leaves of mixed greens, douse again with sauce and serve.








Cherry Tomato Sauce

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 tablespoon shallots
  • 1 tablespoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup red cherry tomatoes
  • 1 cup white wine
  • ¼ cup diced yellow peppers
  • 1 tablespoon parsley
  • 1 tablespoon fresh basil
  • 1 tablespoon unsalted butter

PROCEDURE

  1. Lightly coat frying pan with olive oil, then heat pan. (use same pan after removing tilapia).
  2. Add garlic, shallots, salt, pepper, cherry tomatoes, and white wine to hot pan.
  3. Stir ingredients and let simmer until it reaches a thick gravy-like consistency. 
  4. Add diced yellow pepper, parsley, basil and unsalted butter.
  5. Stir and let simmer.
  6. Pour over tilapia.

Roncier Rouge Maison L. Tramier & Fils

Roncier Rouge the other half of the well kept secret from Burgundy.  Very nice color, hints of strawberry aroma, and soft tannins with a pleasant finish.  Remember this is a no vintage, 100% Pinot Noir (?), and a bargain for $6.99.  I purchased the Roncier Rouge from Pearson's Wine & Spirits in Washington DC, but I have also seen this at Calvert Woodley (Washington DC).

Suggested food pairings are simple or complex meals, and goes best with delicatessen, meat, and cheeses.

I enjoyed the Roncier Rouge with Olive Garden Take-out.  I apologize for it not being a home cook meal, but it was after a long day.  Roncier Rouge paired well with Lasagne Rollatini with Chicken.  The flavors complimented the spices in the dish.

Roncier Blanc Maison L. Tramier & Fils

Roncier Blanc an excellent white wine from Burgundy and a well kept secret....Light straw color, peach aroma, light citrus flavor with a little hint of apple, no vintage, and a price of $6.99.  This white burgundy was a still for $6.99.  I purchased this white wine at Pearson's Wine & Spirits in Washington DC.  I received the email from Steve on Friday evening and when I went to the store Saturday afternoon he told me he sold out early afternoon.  I was lucky he had another shipment arriving on Tuesday and I picked up 3 Roncier Blanc and 6 Roncier Rouge.  I am mad at myself for not buying more for this price.  This is a perfect table wine.

We enjoyed the Roncier Blanc with salmon (cooked in a sweet & savory marinade sauce), sesame ginger rice, and steam broccoli.  I think my wife made a good decision.

Chamarre Jurancon Tradition 2003

Creamy, rich, tropical fruit aromas with flavors of mango and pineapple with loads of spice at the finish.  I am describing Chamarre Jurancon Tradition 2003.  My wife, sister-n-law, niece and I enjoyed this with peach cobbler and it was a "wonderful combination" (sister-n-law exact words).  This wine can also be enjoyed with Asian and Indian dishes, fruit, and of course alone (my wife said she could enjoy alone).  

I picked up two bottles at one of my favorite wine shops in Washington DC (Paul's of Chevy Chase) and my wife said that we have to keep this on hand so I will definitely pick up a few more. 

Enjoy your Chamarre (SHA-MA-RAY): French for "bursting with colors - bursting with flavor".
