2005 Emotion de Terroirs - Blackened Tilapia w/ Cherry Tomato Sauce

Tilapia w/ Cherry Tomato Sauce

     
I thought I would throw a little something together for my wife since I am always watching the Food Network.  Here's a recipe that I borrowed and altered from G. Garvin of Turn up the Heat (Episode 10: Alaskan Halibut with Cherry Tomato Sauce).  I used tilapia and mixed greens since this is what I had at home.

We enjoyed this wonderful dinner with Vincent Girardin 2005 Emotion de Terroirs.  This was an excellent Pinot Noir that I purchased from Pearson's Wine & Spirits that paired well with the blackened tilapia.

Emotion de Terroirs: deep purple color, a little smoky, very fruity aroma, but not too sweet, hint of chocolate on the palate with soft tannins.  Very easy to drink.

Tilapia w/ Cherry Tomato Sauce

INGREDIENTS
  • 4 pieces of tilapia
  • 4 tablespoons of blackening spice
  • 2 tablespoons of olive oil
  • 3 ounce of mixed greens
PROCEDURE
  1. Season both sides of tilapia with blackening spice, then pat with fingertips to make seasoning stick
  2. Lightly coat frying pan with olive oil, then heat pan
  3. Place tilapia in hot pan and brown on both sides
  4. Place tilapia in oven dish and put in oven at 350 to 375 degrees for 5 minutes  (be careful not to overcook)
  5. Place fish on plate and pour cherry tomato sauce on top
  6. Add a few leaves of mixed greens, douse again with sauce and serve.








Cherry Tomato Sauce

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 tablespoon shallots
  • 1 tablespoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup red cherry tomatoes
  • 1 cup white wine
  • ¼ cup diced yellow peppers
  • 1 tablespoon parsley
  • 1 tablespoon fresh basil
  • 1 tablespoon unsalted butter

PROCEDURE

  1. Lightly coat frying pan with olive oil, then heat pan. (use same pan after removing tilapia).
  2. Add garlic, shallots, salt, pepper, cherry tomatoes, and white wine to hot pan.
  3. Stir ingredients and let simmer until it reaches a thick gravy-like consistency. 
  4. Add diced yellow pepper, parsley, basil and unsalted butter.
  5. Stir and let simmer.
  6. Pour over tilapia.

Back on the Playground - Double Dog Dare Chardonnay

Taster 66 is back at home in the Hampton Roads area and he is reporting in.  He is taking us back to the playground with this one.  We all remember when we use to dare our friends to do something stupid.  This time he is daring you to do something wise.  On your march, get ready, set, go....

..."Have I got a white wine to share with you.  This wine is very inexpensive ($3.99) and delicious.  I found this wine while shopping for an everday wine at Total Wine in Chesapeake, VA.  I asked one of the staff members for some recommendations for an everyday wine.  She recommended a couple of other wines which I purchased, but this one was last on the list.  I could not believe the price ($3.99) of Double Dog Dare Chardonnay.  At first, I thought she was pulling my leg.  But after another customer chimed in our conversation to tell us that he bought a case of this wine.  He told me that it was very good for the price ($3.99).  I thought maybe he was not really a wine drinker but after seeing him roll out 2 cases of different wine then I reconsidered his recommendation. I am really impressed with Double Dog Dare Chardonnay for the price and the taste.

tasting notes:  This wine is real light on the pallet, but it is not as crisp as other Chardonnay's.  It has a fruity smell with a little bit of Oak taste but not much. This wine can be consumed by the most inexperienced wine drinker.  My recommendation that this is a good white for a starter wine taster.  It also has a little after taste, but it is not bad. Very SMOOTH!  It can go with almost any type of meal.  It will surprise you!  I woulld definitely recommend this wine for a party or dinner if friends or family are coming over.  Drink chilled.

il Molino di Grace - Chianti Classico 2003

    There are many Chianti Classico on wine shelves in your local wine shop, but I found il Molino di Grace Chianti Classico 2003 in the clearance bin at Paul's of Chevy Chase ($14.99, clearance bin $7.50).  This was definitely a bargain.  Il Molino di Grace "the windmill of grace," is located in the heart of Tuscany's Chianti Classico region. 

Il Molino di Grace Chianti Classico 2003 has a nice ruby color, light floral aroma, soft tannins, with a medium finish.  I enjoyed this wine with lasagne.

Whippet Sauvignon Blanc 2007

It's Saturday evening and I am enjoying another bottle of wine from Longview Vineyard with my wife and her girlfriend.  We are enjoying Longview Vineyard Whippet Sauvignon Blanc 2007.  Aromas of tropical passionfruit and mango described the aromas as I opened the Whippet Sauvignon Blanc 2007.  Whippet Sauvignon Blanc is well balanced, soft, crisp, flavors of passionfruit and melon, with a little acidity and spicy finish.  Purchased from Paul's of Chevy Chase.
